The Mattagami is inspired by a French cheese (we are no longer legally allowed to name it lol), which is considered to be the ancestor of the Cheddar and popular during the Roman Empire. The Mattagami distinguishes itself from this said French cheese by its weight (10 to 15 kg instead of 40) and its shape.

This cheese pairs well with red wine or dry white wines, and can be treated as a Cheddar in recipes.

Description

Artisan Cheese is a living organism and just like us, it will suffocate if directly wrapped in plastic which is why we have packaged it in waxed paper inside the vacuum pack. It should be good for a few weeks sealed and then, when you open the sealed bag, the cheese is best eaten by 2 weeks. Savoured, not saved!

    This is truly excellent cheese. I bought the sample pack so I could taste them all and each one is beautiful, carefully wrapped and succulent in it’s rich and smooth flavor. Very much 5 stars!
