We’ve taken Ferme LaBinnette pasture-raised, GMO-free chicken breast, tenderized it, and spread a delectable filling consisting of Fromagerie Kapuskoise fresh goat cheese, pesto made from Field Good Farms spinach, and garlic scapes. Then, it is rolled and wrapped in Dalew Farms’ Pepper bacon and ready to be baked to perfection. These chicken breasts are so lean by themselves, and wrapping them in bacon and stuffing them with cheese-based stuffing (more fat) helps to add flavor and moisture. The bacon helps keep the chicken juicy by insulating it from direct heat, as well as basting it in the rendered bacon fat as it roasts.
