This is by far our favorite kale and quite possibly the king of our garden!  It has long, strap-shaped foliage that is dark blue-green in color, and it is frequently called “dinosaur kale” because of the bumpy, savoyed texture of its leaves. Our ultimate favorite way to enjoy it is raw, in a salad, with the stems removed. The key here is the raw garlic dressing! (Described below).  This kale is also a wonderful addition to any stir fry or simply sauteed with garlic. It’s dense flavor and nutritional value make it a great base for kale chips as well. Just remove from the stems, lightly coat with olive oil and salt and leave in the oven at the lowest setting till crisp!  We bet you won’t even have time to store them before they are gone:) And don’t throw away those stems! They are super valuable chopped up and frozen for later use in soups! Nothing goes to waist with these babies. They are THAT yummy!

Raw garlic Dressing

Tip: Make it in a 500ml wide mouth mason jar, and use an immersion blender to combine and emulsify all ingredients.

  1.  1/3 of the jar of favorite oil (sesame, olive, avocado)
  2. 1/3 of the jar of your favorite acidic flavor. ( lemon, apple cider vinegar or balsamic vinegar or reduction)
  3. 1/6 of the jar of your favorite syrup. ( Maple, honey, even jam would work!)
  4. 1 whole bulb of garlic (less if you are not as hard core as we are)
  5. a handful of frozen haskaps or other frozen fruit if you have them (optional)

Blend all these ingredients together with the immersion blender and drizzle over chopped up kale pieces. Mix thoroughly until each piece is evenly covered. Top with fruit, nuts, cheese or just eat plain! Add pasta for an instant pasta salad. The possibilities with this kale are endless.
